Quick Beef Stew in Foil
Makes 2 servings
|8||ounces boneless beef top sirloin steak, cut into 1-inch cubes|
|1||medium red potato, peeled and cut into 3/4-inch cubes|
|1||cup frozen mixed vegetables|
|2/3||cup beef gravy|
|1/2||teaspoon parsley flakes|
|1/4||teaspoon dried thyme|
|1/8||teaspoon black pepper|
|1||sheet (20X12 inches) heavy-duty foil, lightly sprayed with nonstick cooking spray|
- Preheat oven to 450°F.
- Combine all ingredients except foil in medium bowl; stir to mix.
- Place beef mixture in center of foil sheet. Double fold sides and ends of foil to seal packet, leaving head space for heat circulation. Place packet on baking sheet.
- Bake 30 minutes or until beef is tender. Carefully open one end of packet to allow steam to escape. Open packet and transfer stew to two bowls.
