Quick Creamed Cauliflower

Another cruciferous vegetable with links to cancer prevention, cauliflower is low in calories, with only 30 calories per cup.

Ingredients

1 package (10 ounces) frozen cauliflower florets
1/2 cup fat-free reduced-sodium chicken broth
1/2 cup evaporated skimmed milk
2 tablespoons all-purpose flour
Salt and pepper to taste (optional)
Paprika (optional)

Preparation

  1. Combine cauliflower and chicken broth in saucepan. Simmer, covered, 10 to 12 minutes or until cauliflower is tender. Combine milk and flour; mix well. Stir into saucepan. Cook and stir until sauce simmers and bubbles. Sprinkle with salt, pepper and paprika before serving, if desired.
