Makes 1 cup
|1||small red bell pepper|
|1/4||cup coarsely chopped fresh cilantro|
|3||green onions, cut into thin slices|
|2||fresh jalapeño peppers,* seeded, minced|
|2||tablespoons fresh lime juice|
|1||clove garlic, minced|
*Jalapeño peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.
- Cut bell pepper lengthwise in half; remove and discard seeds and veins. Cut halves lengthwise into thin slivers; cut slivers crosswise into halves.
- Mix all ingredients in small bowl. Let stand, covered, at room temperature 1 to 2 hours to blend flavors.
