Ricotta Cheese and Blueberry Parfait
Antioxidant-rich blueberries lend their tartness to this pretty dish that's great as a snack, breakfast or dessert.
Makes 4 servings
|1||cup whole milk ricotta cheese|
|1||tablespoon powdered sugar|
|Grated peel of 1 lemon|
|1-1/2||cups fresh blueberries|
- Combine ricotta cheese, sugar and lemon peel in medium bowl; mix well.
- Place 3 tablespoons blueberries in each of 4 parfait glasses. Add 1/4 cup ricotta cheese mixture; top with another 3 tablespoons blueberries. Garnish as desired.
If your carb count can stand it, sprinkle top with some chopped pecans or slivered almonds.
