Roasted Asparagus


Makes 2 servings


1/2 pound asparagus, trimmed, rinsed and dried*
2 teaspoons olive oil
1/8 teaspoon salt
Pinch freshly ground black pepper

*For a more attractive appearance, peel the bottom half of each stalk with a potato peeler.


  1. Preheat oven to 450° F. On cookie sheet with sides, toss asparagus with olive oil. Add salt and pepper, and toss again. Arrange asparagus in single layer on cookie sheet.
  2. Broil until partly browned and tips are beginning to crisp, 10 to 12 minutes. Serve hot.
