Roasted Sweet Potatoes with Cinnamon Sweet Onions


Makes 6 servings


2 pounds sweet potatoes, peeled
1 sweet onion, cut into eighths
2 cloves garlic, chopped
1/4 cup olive oil
1/2 teaspoon ground cinnamon
2 tablespoons orange juice
Salt and black pepper


  1. Preheat oven to 400°F. Cut potatoes in half lengthwise, then into 1-inch-thick slices.
  2. Place potatoes, onion and garlic in 12X8-inch baking dish.
  3. Combine olive oil and cinnamon. Pour over potato mixture. Sprinkle with orange juice, salt and pepper; toss until well coated.
  4. Cover with foil; bake 35 to 40 minutes or until potatoes are tender.
