Salad of Green Papaya with Mint and Chili Oil
Episode 2: Nicole's Menu
|2||green papayas, peeled and seeded|
|2 tablespoons/30 ml||fresh lemon juice (from 1 lemon)|
|3 tablespoons/45 ml||grapeseed oil|
|1 ½ teaspoons||chili oil|
|1 head||frisée lettuce, leaves separated|
|¼ cup||thinly sliced fresh mint leaves|
- Using a Japanese mandolin, cut the papaya into long thin strips. Place the lemon juice in a large bowl and gradually whisk in both of the oils. Season the dressing to taste with salt and pepper. Toss the papaya with the dressing to coat.
- Place the lettuce leaves over a large platter. Place the green papaya over the lettuce leaves. Sprinkle with the mint and serve.
