|2||lbs Fresh Atlantic salmon|
|2||doz. small slider buns|
|1/3||cup brown sugar|
|1/4||cup red wine|
|Salt & pepper to taste|
|1/8||cup Thai chili paste|
|1/2||tablespoon espelette pepper|
|1/8||cup lime juice|
|1||teaspoon cayenne pepper|
- Mix all ingredients and chill until ready to use.
- Melt butter and sugar over medium heat, stirring constantly. Add salt and pepper, then red wine. Keep stirring for 1 minute until sauce thickens and bubbles up. Remove from heat.
- Pour over prepared salmon filets
- Grill salmon until just done. Cut into 2 in square files pieces and place on warmed, lightly buttered bun. Drizzle with spicy aioli and serve warm.
