|1||tablespoon olive oil|
|1||cup chopped mushrooms|
|1||small red bell pepper, seeded and diced|
|1||small onion, diced|
|1||pound hot or mild bulk Italian sausage|
|1||jar (28 to 30 ounces) meatless pasta sauce|
|1||roll (16 to 18 ounces) polenta|
- Preheat oven to 350°F.
- Heat oil in large skillet. Add mushrooms, bell pepper and onion; cook and stir over medium heat 5 minutes or until tender. Add sausage; cook and stir until sausage is brown, breaking into small pieces with spoon. Drain. Stir in pasta sauce and simmer 5 minutes.
- Cut polenta roll into 9 slices and arrange in greased 9-inch square casserole. Top with sausage mixture.
- Bake 15 minutes or until heated through.
