Sesame Honey Vegetable Casserole

The frozen mixed vegetables called for here let you forgo some chopping and slicing without sacrificing any nutrients. In fact, frozen vegetables may contain more nutrients than their fresh counterparts that have been lying around the produce bin too long.


Makes 4 servings


1 package (16 ounces) frozen mixed vegetables such as baby carrots, broccoli, onions and red peppers, thawed and drained
3 tablespoons honey
1 tablespoon dark sesame oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons sesame seeds


  1. Preheat oven to 350°F. Place mixed vegetables in shallow 1-1/2-quart casserole dish or quiche dish.
  2. Combine honey, oil, soy sauce and sesame seeds; mix well. Drizzle evenly over vegetables. Bake 20 to 25 minutes or until vegetables are hot, stirring after 15 minutes.
