Shrimp Scampi over Hot Tomato Relish

This version of shrimp scampi is prepared in heart-healthy olive oil with only a touch of butter. Add a green vegetable or mixed green salad for a quick, healthy dinner.


Makes 4 servings


Hot Tomato Relish
1/4 cup olive oil
1 tablespoon unsalted butter
1 large clove garlic, minced
1 pound large raw shrimp, peeled and deveined
1 tablespoon lemon juice
2 tablespoons minced Italian parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
4 lemon wedges


  1. Prepare Hot Tomato Relish and set aside. Combine oil and butter in large skillet over very low heat. Add garlic and heat 10 minutes; do not burn.
  2. Add shrimp. Cook over low heat 5 minutes, turning once, or until shrimp are opaque and cooked through. Stir in lemon juice, parsley, salt and pepper. Serve over Hot Tomato Relish with lemon wedges.
