Shrimp Toast

Shrimp Toast

Shrimp Toast, a perennial favorite of Chinese cuisine, can be easily prepared at home following this delicious recipe.


Makes 2 dozen appetizers


1/2 pound raw shrimp, peeled and deveined
2 tablespoons chopped green onion
2 tablespoons finely chopped water chestnuts
2 tablespoons soy sauce
1 teaspoon dark sesame oil
1 egg white, lightly beaten
6 slices white sandwich bread, crusts removed
Red and yellow bell pepper strips, for garnish


  1. Finely chop shrimp. If using food processor, process with on/off pulses, about 10 times or until shrimp are finely chopped.
  2. Combine shrimp, onion, water chestnuts, soy sauce and sesame oil in medium bowl; mix well. Stir in egg white; mix well.*
  3. Toast bread lightly on both sides. Cut diagonally into quarters. Spread shrimp mixture evenly over toast to edges.
  4. Place toast on foil-lined baking sheet or broiler pan. Broil 6 inches from heat 4 minutes or until lightly browned. Garnish with peppers.
