Simple Turkey Soup

Makes 8 servings
|2||pounds ground turkey, cooked and drained|
|1||can (about 28 ounces) whole tomatoes, undrained|
|2||cans (about 14 ounces each) beef broth|
|1||bag (16 ounces) frozen mixed soup vegetables (such as carrots, beans, okra, corn or onion), thawed|
|1/2||cup uncooked barley|
|1||teaspoon dried thyme|
|1/2||teaspoon ground coriander|
- Combine all ingredients in 5-quart slow cooker. Add water to cover. Cover; cook on HIGH 3 to 4 hours.
Very easy to make. Try adding other frozen or canned vegetables or extra diced potatoes and carrots. Sliced, diced or stewed tomatoes can be substituted for the whole tomatoes. For a large crowd, add corn and serve with cornbread.
