Makes 2 servings
|12||ounces small red potatoes (about 8)|
|3||tablespoons sour cream*|
|3||tablespoons unsalted butter|
|1||tablespoon chopped fresh chives (optional)|
*Any dairy product can be used: sour cream, buttermilk or heavy cream.
- Bring enough water to cover potatoes by 2 inches to a boil in medium pot over high heat; reduce to vigorous simmer. Cook until tender, about 20 minutes.
- Drain and transfer to medium bowl. Add salt, sour cream, butter and milk, and mash with potato masher until blended.
