Smashed Potatoes


Makes 2 servings


12 ounces small red potatoes (about 8)
1 teaspoon salt
3 tablespoons sour cream*
3 tablespoons unsalted butter
1 tablespoon milk
1 tablespoon chopped fresh chives (optional)

*Any dairy product can be used: sour cream, buttermilk or heavy cream.


  1. Bring enough water to cover potatoes by 2 inches to a boil in medium pot over high heat; reduce to vigorous simmer. Cook until tender, about 20 minutes.
  2. Drain and transfer to medium bowl. Add salt, sour cream, butter and milk, and mash with potato masher until blended.
