Southwestern-Style Chicken

Ingredients
1 | package (about 1-1/4 ounces) taco seasoning mix |
1/4 | cup all-purpose flour |
6 | to 8 boneless skinless chicken thighs or 4 boneless skinless chicken breasts, cut in half |
2 | tablespoons vegetable oil |
1 | large onion, cut into 1-inch pieces |
2 | green bell peppers, cut into 1-inch pieces |
1 | can (14-1/2 ounces) diced tomatoes with jalapeños, undrained |

Preparation
- Reserve 1 teaspoon taco seasoning. Combine flour and remaining seasoning in large resealable food storage bag. Add chicken, 1 to 2 pieces at a time; shake to coat.
- Heat oil in large skillet over medium-high heat; brown chicken. Transfer chicken to slow cooker; sprinkle with reserved seasoning.
- In same skillet cook and stir onion until translucent. Place onion, bell peppers and tomatoes with juice in slow cooker. Cover; cook on LOW 6 to 7 hours or until chicken is tender. Season to taste with salt and pepper.
