Makes 4 to 6 servings
|1||package (about 1-1/4 ounces) taco seasoning mix|
|1/4||cup all-purpose flour|
|6||to 8 boneless skinless chicken thighs or 4 boneless skinless chicken breasts, cut in half|
|2||tablespoons vegetable oil|
|1||large onion, cut into 1-inch pieces|
|2||green bell peppers, cut into 1-inch pieces|
|1||can (14-1/2 ounces) diced tomatoes with jalapeños, undrained|
|Salt and black pepper|
- Reserve 1 teaspoon taco seasoning. Combine flour and remaining seasoning in large resealable food storage bag. Add chicken, 1 to 2 pieces at a time; shake to coat.
- Heat oil in large skillet over medium-high heat; brown chicken. Transfer chicken to slow cooker; sprinkle with reserved seasoning.
- In same skillet cook and stir onion until translucent. Place onion, bell peppers and tomatoes with juice in slow cooker. Cover; cook on LOW 6 to 7 hours or until chicken is tender. Season to taste with salt and pepper.
