Speedy Garden Roll-Ups
These colorful low-fat sandwich roll-ups are packed with dietary fiber. Wrap and take them to the office or cut them into pinwheels for appetizers.
Makes 4 servings
|4||(7-inch) flour tortillas|
|1/2||cup shredded carrot|
|1/2||cup shredded red cabbage|
|1/2||cup (2 ounces) shredded reduced-fat Cheddar cheese|
|4||red leaf lettuce leaves|
- Prepare Chickpea Spread.
- Spread each tortilla with 1/4 cup Chickpea Spread to about 1/2 inch from edge. Sprinkle evenly with 2 tablespoons each carrot, cabbage and cheese. Top with 1 lettuce leaf.
- Roll up tortillas jelly-roll fashion. Seal with additional Chickpea Spread.
- Serve immediately or wrap tightly with plastic wrap and refrigerate up to 4 hours.
