Spinach Cheese Strata the Editors of Publications International, Ltd.
Makes 4 to 6 servings
|6||slices whole wheat bread|
|2||tablespoons butter or margarine, softened|
|1||cup (4 ounces) shredded Cheddar cheese|
|1/2||cup (2 ounces) shredded Monterey Jack cheese|
|6||eggs, lightly beaten|
|1||package (10 ounces) frozen spinach, thawed and well drained|
|1/8||teaspoon black pepper|
- Spread bread with butter; arrange in single layer in greased 13X9-inch baking dish. Sprinkle with cheeses.
- Combine milk, eggs, spinach, salt and pepper in large bowl; stir well. Pour over bread and cheese. Cover; refrigerate at least 6 hours or overnight.
- Preheat oven to 350°F. Bake strata, uncovered, about 1 hour or until puffy and lightly golden.
