Stir-Fried Pork with Oranges and Snow Peas

Makes 4 servings
|1||cup uncooked rice|
|1||tablespoon vegetable oil|
|1||pound lean boneless pork, cut into 1/4-inch-wide strips|
|1/2||pound snow peas, trimmed|
|1/2||cup prepared stir-fry sauce|
|2||tablespoons frozen orange juice concentrate|
|1||can (11 ounces) mandarin orange sections, drained|
- Cook rice according to package directions.
- Heat oil in wok or large skillet over high heat until hot. Stir-fry pork 3 minutes or until brown.
- Add snow peas; stir-fry 2 to 3 minutes or until crisp-tender. Add stir-fry sauce and juice concentrate; stir until well blended. Gently stir in orange sections. Serve with rice.
Frozen orange juice concentrate can be scooped and measured when frozen. There's no need to thaw the entire can. A small amount, such as the 2 tablespoons here, will thaw in the time it takes to prepare steps 1 and 2.
