Summer Melon Soup
Makes 6 servings
|1||medium-size ripe cantaloupe, cut into cubes|
|1/3||cup orange juice|
|1/4||cup plain fat-free yogurt|
|3||tablespoons lime juice|
|6||thin slices lime for garnish|
|Dash ground nutmeg|
- Combine cantaloupe, orange juice, yogurt, lime juice and honey in food processor or blender; process until smooth. Refrigerate, covered, 1 to 2 hours until chilled.
- Serve soup in chilled bowls. Garnish with lime slices; sprinkle with nutmeg.
