Summer Melon Soup


Makes 6 servings


1 medium-size ripe cantaloupe, cut into cubes
1/3 cup orange juice
1/4 cup plain fat-free yogurt
3 tablespoons lime juice
2 tablespoons honey
6 thin slices lime for garnish
Dash ground nutmeg


  1. Combine cantaloupe, orange juice, yogurt, lime juice and honey in food processor or blender; process until smooth. Refrigerate, covered, 1 to 2 hours until chilled.
  2. Serve soup in chilled bowls. Garnish with lime slices; sprinkle with nutmeg.
