Summertime Fruit Medley
This medley of summer's succulent fruits tossed with amaretto will dazzle your guests. They can enjoy seconds of this low-calorie, low-fat dessert.
Makes 8 servings
|2||large ripe peaches, peeled and sliced|
|2||large ripe nectarines, sliced|
|1||large ripe mango, peeled and cut into 1-inch chunks|
|2||cups orange juice|
|1/4||cup amaretto or 1/2 teaspoon almond extract|
|2||tablespoons sugar or 3 packets sugar substitute|
|fresh mint for garnish (optional)|
- Combine peaches, nectarines, mango and blueberries in large bowl.
- Whisk orange juice, amaretto and sugar in small bowl until sugar is dissolved. Pour over fruit mixture; toss to coat. Marinate 1 hour at room temperature, gently stirring occasionally. Garnish with fresh mint, if desired.
