|1||tablespoon fat-free mayonnaise|
|1||tablespoon fat-free sour cream|
|2||teaspoons frozen orange juice concentrate, thawed|
|1/4||teaspoon grated orange peel|
|1||boneless skinless chicken breast (about 1 pound), cooked and chopped|
|1||large kiwi, thinly sliced|
|1/3||cup canned mandarin oranges, drained|
|1/4||cup finely chopped celery|
|4||lettuce leaves, washed|
|2||tablespoons coarsely chopped cashews|
- Combine mayonnaise, sour cream, orange juice concentrate and orange peel in small bowl. Add chicken, kiwi, oranges and celery; toss to coat.
- Cover; refrigerate 2 hours. Serve on lettuce leaves. Sprinkle with cashews.
