Sunny Day Breakfast Burrito
Makes 4 servings
|1/2||cup red or green bell pepper, chopped|
|2||green onions, sliced|
|4||(7-inch) flour tortillas, warmed|
|1/2||cup shredded colby-Jack or Mexican blend cheese|
- Melt butter in medium skillet over medium heat. Add bell pepper and green onion; cook and stir about 3 minutes or until tender.
- Beat eggs, milk and salt in medium bowl. Add egg mixure to skillet; reduce heat to low. Cook, stirring gently, until eggs are just set. (Eggs should be soft with no liquid remaining.)
- Spoon egg mixture down center of tortillas; top with cheese. Fold in sides to enclose filling. Serve with salsa
