Sunrise Burrito


Makes 1 burrito


2 ounces bulk sausage
1/4 cup chopped onion
2 eggs
1 tablespoon water
2 tablespoons canned chopped green chilies
1 (10-inch) flour tortilla


  1. Combine sausage and onion in microwavable 1-quart casserole. Microwave on HIGH 1-1/2 to 2-1/2 minutes or until sausage is brown and onion is tender, stirring once to break up meat.
  2. Beat eggs with water in small bowl. Stir in chilies.
  3. Drain fat from casserole. Add egg mixture to sausage and onion; mix well. Microwave on HIGH 1-1/2 to 2-1/2 minutes, stirring once. Do not overcook; eggs should be soft with no liquid remaining.
  4. Microwave tortilla on HIGH about 15 seconds. Fill with scrambled egg mixture.


To heat tortilla in a microwave oven, wrap loosely in a damp paper towel before microwaving.
