Super Peanut Butter Sandwich

Makes 4 servings
|2/3||cup peanut butter|
|2||tablespoons toasted wheat germ|
|8||slices firm-texture whole wheat or multi-grain bread|
|1||ripe banana, sliced|
|1/2||cup cholesterol-free egg substitute or two eggs, beaten|
|1/3||cup orange juice|
|1||tablespoon grated orange peel|
|1||tablespoon margarine or butter|
- Combine peanut butter, wheat germ and honey in small bowl. Spread evenly on one side of each bread slice.
- Place banana slices on top of peanut butter mixture on four slices of bread. Top with remaining bread slices, peanut butter side down. Lightly press together.
- Combine egg substitute, orange juice and orange peel in shallow dish. Dip sandwiches in egg mixture, coating both sides.
- Melt margarine in large nonstick skillet. Cook sandwiches over medium heat until golden brown, turning once. Serve immediately.
