Sweet Potato & Pecan Casserole

Makes 6 to 8 servings
|1||can (40 ounces) sweet potatoes, drained and mashed|
|1/2||cup apple juice|
|1/3||cup plus 2 tablespoons butter, melted, divided|
|1/2||teaspoon ground cinnamon|
|1/4||teaspoon black pepper|
|1/3||cup chopped pecans|
|1/3||cup brown sugar|
|2||tablespoons all-purpose flour|
- Lightly grease slow cooker. Combine sweet potatoes, apple juice, 1/3 cup butter, salt, cinnamon and pepper in large bowl. Beat in eggs. Place mixture into prepared slow cooker.
- Combine pecans, brown sugar, flour and remaining 2 tablespoons butter in small bowl. Spread over sweet potatoes.
- Cover; cook on HIGH 3 to 4 hours.
This casserole is excellent to make for the holidays. Using the slow cooker frees the oven for other dishes.
