Sweet Potato Spread Sandwich

Ingredients
4 | slices light multi-grain bread |
4 | ounces sweet potato |
2 | tablespoons chopped walnuts |
2 | tablespoons dried cranberries |
1/2 | teaspoon ground cinnamon |
2 | teaspoons sugar substitute |
4 | tablespoons fat-free whipped topping |
Preparation
- Toast multi-grain bread slices.
- Peel and chop sweet potato and place in glass dish. Sprinkle with 2 tablespoons water. Microwave on HIGH 6 minutes. Let cool and mash with cooking liquid.
- Mix walnuts, dried cranberries, cinnamon and sugar substitute and mash into potato.
- Divide sweet potato mixture between 2 slices toast, spread whipped topping over sweet potato mixture, and cover with other slice of toast. Cut into halves.
