Sweet Potato Spread Sandwich

Makes 4 servings


4 slices light multi-grain bread
4 ounces sweet potato
2 tablespoons chopped walnuts
2 tablespoons dried cranberries
1/2 teaspoon ground cinnamon
2 teaspoons sugar substitute
4 tablespoons fat-free whipped topping


  1. Toast multi-grain bread slices.
  2. Peel and chop sweet potato and place in glass dish. Sprinkle with 2 tablespoons water. Microwave on HIGH 6 minutes. Let cool and mash with cooking liquid.
  3. Mix walnuts, dried cranberries, cinnamon and sugar substitute and mash into potato.
  4. Divide sweet potato mixture between 2 slices toast, spread whipped topping over sweet potato mixture, and cover with other slice of toast. Cut into halves.
