Makes 4 servings
|1||pound large fresh mushrooms|
|2||tablespoons soy sauce|
|2||teaspoons peanut or vegetable oil|
|1||teaspoon dark sesame oil|
|1||clove garlic, minced|
|1/2||teaspoon crushed Szechuan peppercorns or red pepper flakes|
- Place mushrooms in large plastic bag. Add remaining ingredients to bag. Close bag securely; shake to coat mushrooms with marinade. Marinate at room temperature 15 minutes or cover and refrigerate up to 8 hours. (Mushrooms will absorb marinade.)
- Thread mushrooms onto skewers. Grill or broil mushrooms 5 inches from heat 10 minutes or until lightly browned, turning once. Serve immediately.
For <em>Szechuan-Grilled Mushrooms and Onions</em>, add 4 green onions, cut into 1-1/2-inch pieces, to marinade. Alternately thread onto skewers with mushrooms. Proceed as directed in step 2.
