Makes 6 to 8 servings
|1/4||cup lime juice|
|3||large cloves garlic, crushed|
|2||tablespoons olive oil|
|1/4||teaspoon black pepper|
|1||cup (4 ounces) shredded Colby-Jack cheese|
|1||cup seeded, diced plum tomatoes|
|1/3||cup sliced pitted ripe olives|
|1||tablespoon minced fresh cilantro|
- Cut avocados in half; remove pits. Scoop out flesh into food processor. Add lime juice, garlic, olive oil, salt and pepper. Cover; process until almost smooth.
- Spread avocado mixture evenly onto large dinner plate or serving platter, leaving border around edge. Top with cheese, tomatoes, olives, salsa and cilantro. Serve with tortilla chips.
