Toasted Coconut and Tropical Fruit Parfait the Editors of Publications International, Ltd.

Makes 4 servings
|2||tablespoons flaked sweetened coconut|
|1||cup pineapple sherbet|
|1||cup diced strawberries|
|3/4||cup diced mango or peaches|
|1||kiwi, peeled and diced|
- Heat small skillet over medium-high heat until hot. Add coconut; cook and stir 1 to 1-1/2 minutes or until golden, stirring constantly. Remove from heat; set aside.
- Spoon 1/4 cup sherbet into each of 4 parfait or wine goblets. Top with mango, strawberries and kiwi. Sprinkle coconut over top.
