Toasted Coconut and Tropical Fruit Parfait

Prep Time 10 minutes


Makes 4 servings


2 tablespoons flaked sweetened coconut
1 cup pineapple sherbet
1 cup diced strawberries
3/4 cup diced mango or peaches
1 kiwi, peeled and diced


  1. Heat small skillet over medium-high heat until hot. Add coconut; cook and stir 1 to 1-1/2 minutes or until golden, stirring constantly. Remove from heat; set aside.
  2. Spoon 1/4 cup sherbet into each of 4 parfait or wine goblets. Top with mango, strawberries and kiwi. Sprinkle coconut over top.
