Makes about 2 cups
|2||tablespoons olive oil or butter|
|1||clove garlic, minced|
|2||pounds ripe plum tomatoes, peeled, seeded and chopped|
|1/4||cup finely chopped prosciutto or cooked ham (optional)|
|1||tablespoon finely chopped fresh basil|
|Salt and black pepper|
- Heat oil in medium saucepan over medium heat until hot. Add garlic; cook 30 seconds or until fragrant. Stir in tomatoes and sugar. Cook 10 minutes or until most of liquid has evaporated. Stir in prosciutto, if desired, and basil. Cook 2 minutes. Season to taste with salt and pepper.
