Wire Steamer Rack

Wire steamer racks that fit in the wok may also be used for steaming and are especially good for braising and smoking. A round wire cooling rack may be used.

  1. Place wire rack in wok. Add water to 1 inch below rack. (Water should not touch rack.)

  2. Cover wok; bring water to a boil over high heat.

  3. Arrange ingredients on heatproof plate. Place plate on rack in wok.

    Place plate in wok.
    Place plate in wok.
  4. Cover wok and reduce heat to medium. Steam food as directed in recipe. Carefully remove plate from wok.
