Makes 8 tostadas


Spiced Meat Filling
1 can (about 15 ounces) refried beans
8 (6- or 7-inch) crisp-fried corn tortillas
2 cups shredded lettuce
1 cup (4 ounces) shredded Cheddar or Monterey Jack cheese
1 large avocado, peeled, pitted and sliced
2 tomatoes, cut into wedges or chopped
1 small onion, thinly sliced crosswise, separated into rings
1 cup salsa or picante sauce
Cilantro sprigs for garnish


  1. Prepare Spiced Meat Filling; keep warm. Heat refried beans in large skillet. To assemble each tostada, place 1 tortilla on dinner plate and spread with about 1/4 cup refried beans. Top with meat filling, lettuce, cheese, avocado, tomatoes and onion. Drizzle with salsa. Garnish with cilantro.
