Makes 8 tostadas
|Spiced Meat Filling|
|1||can (about 15 ounces) refried beans|
|8||(6- or 7-inch) crisp-fried corn tortillas|
|2||cups shredded lettuce|
|1||cup (4 ounces) shredded Cheddar or Monterey Jack cheese|
|1||large avocado, peeled, pitted and sliced|
|2||tomatoes, cut into wedges or chopped|
|1||small onion, thinly sliced crosswise, separated into rings|
|1||cup salsa or picante sauce|
|Cilantro sprigs for garnish|
- Prepare Spiced Meat Filling; keep warm. Heat refried beans in large skillet. To assemble each tostada, place 1 tortilla on dinner plate and spread with about 1/4 cup refried beans. Top with meat filling, lettuce, cheese, avocado, tomatoes and onion. Drizzle with salsa. Garnish with cilantro.
