Tropical Turkey Salad


Makes 6 servings


4 cups cubed cooked turkey
2 cups diced ripe mango (2 medium mangos)
1 cup pecan pieces, toasted
3/4 cup reduced-fat mayonnaise
1 tablespoon lime juice
1 teaspoon poppy seeds
1/2 teaspoon salt
1/4 teaspoon black pepper
6 cups greens, such as Bibb lettuce or spinach leaves


  1. Combine turkey, mangos and pecans in large bowl. Combine remaining ingredients except greens in small bowl. Blend well and pour over turkey mixture; toss.
  2. Arrange greens on plates. Spoon turkey salad over greens. Serve immediately or cover and refrigerate up to 4 hours.
