Tropical Turkey Salad
Makes 6 servings
|4||cups cubed cooked turkey|
|2||cups diced ripe mango (2 medium mangos)|
|1||cup pecan pieces, toasted|
|3/4||cup reduced-fat mayonnaise|
|1||tablespoon lime juice|
|1||teaspoon poppy seeds|
|1/4||teaspoon black pepper|
|6||cups greens, such as Bibb lettuce or spinach leaves|
- Combine turkey, mangos and pecans in large bowl. Combine remaining ingredients except greens in small bowl. Blend well and pour over turkey mixture; toss.
- Arrange greens on plates. Spoon turkey salad over greens. Serve immediately or cover and refrigerate up to 4 hours.
