Turkey and Sharp Cheddar Panini with Cranberry Mayo
Makes 2 to 4 servings
|1/4||cup dried sweetened cranberries|
|2||tablespoons Dijon mustard|
|1/4||to 1/2 teaspoon ground cumin|
|1||loaf (10 inches) Italian bread|
|6||ounces smoked deli sliced turkey|
|2||ounces sharp Cheddar cheese, thinly sliced|
|1||tablespoon butter or margarine|
- Place mayonnaise, cranberries, mustard, milk and cumin in food processor or blender; process until almost smooth, scraping sides frequently. Place bread on cutting board; cut in half horizontally. Spread mayonnaise mixture evenly over cut sides of bread. Layer turkey and cheese on bottom of bread; close sandwich with top of bread.
- Melt butter in large nonstick skillet over medium heat. Add sandwich; press down lightly with spatula or weigh down with small plate. Cook sandwich 4 to 5 minutes per side or until cheese melts and sandwich is golden brown.
