Vegetable Stir-Fry

This recipe is part of the recipe for Mini Turkey Loaves


1 tablespoon vegetable oil
3 to 4 carrots, diagonally sliced
2 zucchini, diagonally sliced
3 tablespoons orange juice
Salt and pepper


  1. Heat oil in medium skillet or wok over medium heat. Add carrots; stir-fry 3 minutes. Add zucchini and orange juice; stir-fry 4 minutes or until vegetables are crisp-tender. Season with salt and pepper to taste.
