Makes 4 servings
|2||rounds whole wheat pita bread, cut in half horizontally (to make 4 rounds)|
|1/4||cup pizza sauce|
|1||teaspoon dried basil|
|1/8||teaspoon red pepper flakes (optional)|
|1/2||cup thinly sliced green bell pepper|
|1/2||cup thinly sliced red onion|
|1||cup sliced mushrooms|
|1||cup (4 ounces) shredded mozzarella cheese|
|2||teaspoons grated Parmesan cheese|
- Preheat oven to 475°F.
- Arrange pita rounds, rough sides up, in single layer on large nonstick baking sheet. Spread 1 tablespoon pizza sauce evenly over each round to within 1/4 inch of edge. Sprinkle with basil and red pepper flakes, if desired. Top with bell pepper, onion, mushrooms and mozzarella.
- Bake 5 minutes or until cheese is melted and pita edges are golden brown. Remove from oven. Sprinkle 1/2 teaspoon Parmesan over each round.
These pitas can be served as appetizers, as well.
