Makes 4 servings
|2||large sweet potatoes (about 2 pounds)|
|2||tablespoons vanilla yogurt|
|2||tablespoons apple jelly|
- Pierce potatoes in several places with fork. Microwave on HIGH 10 minutes. Turn potatoes over; microwave 5 minutes more or until tender. Let stand 2 minutes; peel.
- Place potatoes in medium bowl. Add yogurt, apple jelly and salt. Mash with potato masher or fork until smooth. Whip with whisk until light and fluffy.
