Whipped Sweet Potatoes

Makes 4 servings


2 large sweet potatoes (about 2 pounds)
2 tablespoons vanilla yogurt
2 tablespoons apple jelly
1/2 teaspoon salt


  1. Pierce potatoes in several places with fork. Microwave on HIGH 10 minutes. Turn potatoes over; microwave 5 minutes more or until tender. Let stand 2 minutes; peel.
  2. Place potatoes in medium bowl. Add yogurt, apple jelly and salt. Mash with potato masher or fork until smooth. Whip with whisk until light and fluffy.
