White Decorators Icing

Makes about 2 cups


2 egg whites
1/2 teaspoon cream of tartar
4 cups sifted powdered sugar


  1. Combine egg whites and cream of tartar in large bowl. Beat with heavy-duty electric mixer on medium speed until foamy. Beat in sugar, 1/2 cup at a time, beating until very stiff. Use within 1 hour. Cover with damp, not wet, paper towel until ready to use. (Icing is best for piping decorations you want to completely harden.)
