Lee Ann Whippen of Wood Chick's BBQ shares her Grilled Marinated Vegetable recipe. Whippen appears in 'BBQ Pitmasters' on TLC.
|3/4||cup extra virgin olive oil|
|1/3||Fresh lemon juice|
|2||Tablespoon of fresh thyme, finely chopped or 1 tbsp dry|
|5||Tablespoon fresh rosemary, finely chopped or 2 tbsp dry|
|1/2||Teaspoon freshly ground pepper|
|1||Red onion, sliced into ½ “ thick slices|
|10||Asparagus spears, bottom snapped off|
|1||Red bell pepper, cut into wedges, lengthwise|
- Pour marinade over veggies and marinade for ½ hr.
- Preheat grill to med –high heat.
- Remove veggies from marinade and place on grill.
- Lightly oil grill grates just prior to putting veggies on.
- Grill for 15-20 min.
