Zesty Barbecue Shrimp
Makes 4 servings
|2||tablespoons butter or margarine|
|1||cup sliced fresh mushrooms|
|6||green onions, sliced|
|1||clove garlic, minced|
|1||medium tomato, seeded and chopped|
|1/2||cup prepared barbecue sauce|
|2||tablespoons hot pepper sauce|
|1||tablespoon lemon juice|
|1||pound raw medium-size shrimp, shelled, deveined|
|Hot cooked rice|
- Heat butter in large skillet until hot; add mushrooms, green onions and garlic and cook 1 to 2 minutes. Add tomato, barbecue sauce, hot pepper sauce and lemon juice; heat to boiling.
- Stir in shrimp. Simmer, uncovered, 4 to 5 minutes or until shrimp turn pink, stirring frequently. Serve over rice.
